Coffelipe

Snickers Bar, Plum, Candied Maple Syrup

$30.00

This is a beautiful field blend hailing from one of our favorite regions in Colombia, the west-central department of Caldas. This small lot undergoes natural processing and earns extra points thanks to the producers’ use of regenerative agriculture and natural soil management. Father and son team Elmer & Juan Felipe Restrepo have crafted a coffee that takes us back to some of the first natural Colombians we ever tried. Natural coffees have only gained popularity in Colombia over the past decade, as producers have invested in the infrastructure needed to successfully produce them in the country’s typically wet climate.

ABOUT THE FARM

At just 16 years old, Elmer Restrepo began working in coffee and found much more than a livelihood; he found a path to shape the world around him. More than four decades later, he’s a respected voice in Colombian coffee and the founder of Finca Chambakú, which he runs with his youngest son, Juan Felipe Restrepo.

A curious and driven “bean hunter,” Juan Felipe brings a scientific approach to fermentation and processing, complementing his father’s experience and intuition. Together, they’re building a legacy that goes beyond production, guided by the belief that coffee should give back as much as it takes.

At Chambakú, regenerative agriculture is central to that philosophy. The farm prioritizes soil health by reintroducing organic matter, composting natural by-products, and using microorganisms in place of chemical interventions to build a more balanced and resilient ecosystem. Juan Felipe has also developed an ecological wet mill system that drastically reduced water use from 40 liters down to just 0.2 liters per kilogram of coffee. This innovation has made the farm a pioneer in the region, incorporating bioreactors as part of a cleaner, more efficient process.

Chambakú benefits from a distinctive environment, situated in a natural corridor shaped by winds and water descending from Nevado del Ruiz. Here, father and son continue to explore what’s possible when generations of experience meet scientific curiosity and a commitment to more sustainable coffee production.

ABOUT THE PROCESSING

The natural processing begins with cherries harvested at optimal ripeness, with a sugar content between 14° and 16° Brix. The cherries are then floated to separate lower-density fruit before being transferred to fermentation tanks in 1,500 kg batches. A 36-hour dry fermentation follows, allowing the natural characteristics of the fruit to develop.

After fermentation, the coffee is dried in a mechanical silo for 30 hours, with temperatures carefully maintained below 50°C to ensure stability and consistency.
